About Irish Christmas Puddings

The festive season in Ireland is a heartwarming blend of rich traditions, with none quite as indulgent and emblematic as the iconic Irish Christmas Pudding. With its deep, treacly flavors, dense texture, and ceremonious presentation, this dessert captures the essence of an Irish Yuletide. Beyond its delicious taste, the Christmas Pudding holds a special place in the hearts of the Irish because of its storied history and the traditions enveloping its creation.

A Historical Delight

The roots of Christmas pudding trace back to medieval England, but Ireland embraced and adapted the dessert with characteristic warmth and ingenuity. The original version was more of a porridge, known as ‘frumenty,’ made of meat, grains, and wine. With time, as more ingredients became available and culinary tastes evolved, the savoury porridge transformed into the sweet, rich, fruit-laden concoction we know today.

In the 16th century, prunes became a key ingredient, and by the 17th century, the pudding had evolved into something closely resembling the modern-day dessert, brimming with dried fruits and spices. However, the Catholic Church associated the rich, sumptuous nature of the pudding with the extravagance and decadence of the Feast of Epiphany. As a result, the dessert was banned for a time. But like all good things, it made a triumphant return, with the Victorians refining and popularizing the pudding as a centrepiece of the Christmas feast.

Irish Touches to a Classic

While the broader outlines of the pudding’s history are shared with the English, the Irish gave it distinctive touches. Unique local ingredients like Irish whiskey, stout, or treacle, and specific fruit combinations became emblematic of the Irish version.

One key aspect that sets the Irish Christmas Pudding apart is its preparation time. Many Irish households commence the making of the pudding on “Stir-up Sunday,” which is the last Sunday before Advent (usually five weeks before Christmas). This provides ample time for the pudding to mature, allowing the flavours to meld beautifully.

Entwined Traditions

The preparation of the Irish Christmas Pudding is a family affair. Everyone, from the youngest to the eldest, takes a turn at stirring the mixture, making a wish as they do so. This act of communal preparation binds the family in shared hopes and aspirations.

Another delightful tradition is the inclusion of small tokens or coins in the pudding batter. Historically, a variety of items were hidden within, such as a coin (for wealth), a ring (for marriage), or a thimble (for thrift). Discovering one of these in your slice of pudding was seen as a harbinger of things to come in the new year.

Irish Christmas Recipe

Ingredients:

225g raisins

225g currants

225g sultanas

110g mixed peel

175g breadcrumbs

175g flour

175g brown sugar

175g suet or butter, grated

3 eggs

1 small apple, grated

Juice and zest of 1 lemon and 1 orange

1 tsp mixed spice

1/4 tsp nutmeg

A pinch of salt

250ml Irish stout or beer

50ml Irish whiskey or brandy

Instructions:

In a large mixing bowl, combine all the dry ingredients.

Add the grated apple, zest, and juice of the citrus fruits.

In a separate bowl, beat the eggs and then add them to the mixture.

Gradually mix in the stout and whiskey until you have a moist, dropping consistency.

Stir well, ensuring every family member gets a chance to stir and make a wish!

Transfer the mixture into a greased pudding basin, covering the top with a circle of parchment paper.

Place a cloth over the basin, tying it securely with a string.

Steam the pudding for about 6 hours, making sure the water doesn’t boil dry.

Once done, let it cool and store it in a cool, dark place. On Christmas Day, steam again for 2 hours before serving.

Serve flaming with brandy and accompanied by brandy butter or fresh cream.

In conclusion, the Irish Christmas Pudding is more than just a dessert; it’s a sensory tapestry of flavours, a bond of family unity, and a sweet embodiment of Irish Christmas traditions. Every bite carries with it the echoes of history and the warmth of cherished memories.

Schryer, Enblom & Clark in Concert

This phenomenal trio of Celtic musicians features Franco-Ontarian fiddler Pierre Schryer, North American folk dance specialist Danielle Enblom, and Scottish-Canadian guitarist Ian Clark. The group brings together three diverse music careers laden with nominations and diplomas including JUNO, Canadian Folk Music Awards, Western Canadian Music Awards, as well as a Diploma in Traditional Irish Music (UCC). The trio manifests a true presence on stage that openly shares the muse of their music-making and their rhythmic creations. Pierre & Ian first connected in Ottawa at Rasputin’s, during the height of Irish session playing in the mid-1990’s and early 2000’s. In 2004, Schryer & Clark recorded an album at Rasputin’s to celebrate those amazing years. “Heat of the Moment” is now an acclaimed album in the Canadian Celtic music scene. Making this group a super trio, is Minnesota step dancer Danielle Enblom, who performs the old Irish dancing master traditions, along with some flavours of her own Métis and Québécois heritage. This exceptional ensemble performs an eclectic array of musical gems from across the globe including traditional and contemporary tunes in various styles from far reaching places including Ireland, Scotland, Brazil, Quebec, USA and more. The show will surely delight - Schryer, Enblom & Clark is a tour de force of

versatility, fine musicianship and technical dexterity!

Pierre Schryer - Fiddle, Foot Percussion

Pierre Schryer is one of Canada’s leading traditional fiddlers. A recipient of numerous titles and awards including Canadian Open Fiddle Champion, Grand Masters Champion, Violoneux

Championnat, and North American Irish Fiddle Champion, Pierre truly captivates an audience with his energy and genuine warmth. His ability knows no bounds, covering styles

from Irish, Scottish, Québecois, and Cape Breton to Canadian Old Time, American Swing and more. In the mid-90s, Pierre Schryer Band built an international reputation as one of Canada’s most well respected traditional music ensembles by touring throughout Canada, the USA, Ireland, Europe and the UK. Pierre has shared the stage with hundreds of internationally renowned colleagues in the traditional music scene and has performed with numerous orchestras across Canada with his acclaimed Symphony Pops show. Of his seven recordings released on his own label New Canadian Records, “Blue Drag” was nominated at the 2004 JUNO Awards for best Roots and Traditional

(Group) Album of the Year, “Mélange” at the 2008 Canadian Folk Music Awards for Instrumental Solo Album of the Year, and “2 Worlds United”, a brilliant duo album with top Irish button accordionist Dermot Byrne, was distributed worldwide by Claddagh Records. In 2019, Schryer teamed up with BC guitarist Adam Dobres and released “Mandorla.” The album was nominated at the 2020 Canadian Folk Music Awards as well as at the 2020 Western Canadian Music Awards. Pierre’s talents extend beyond his musical abilities, he’s an accomplished luthier and artist currently performing on one of his own violins and bows. Pierre Schryer, as producer, also created and directed his own festival “Canadian Celtic Celebration,” in Thunder Bay, Ontario from 2000 to 2017. Dedicated to passing on the tradition, Pierre teaches at numerous fiddle camps and retreats, and is committed to creating

community through traditional music sessions, community dances and collaborative projects

wherever he resides.

Danielle Enblom - Step dance (Gigue)

Danielle Enblom is a dance historian, choreographer, sean-nós Irish dancer, and award-winning step dancer and jigger from Mni Sota Makoce - Minneapolis, Minnesota. She is Red River Métis with strong French Canadian and Swedish ancestral roots. Danielle has shared the stage throughout North America and Europe with many of the world’s top traditional musicians including Altan, Lunasa, Liz Carroll, Alex Kusturok, Eileen Ivers, Julie Fowlis, Enda Scahill (We Banjo 3), Seamus Egan (Solas), and Cherish the Ladies. She recently appeared in the world premiere of Canada’s first full-scale Indigenous-led Opera, Li Keur: Riel’s Heart of the North. Danielle holds a research-based master's degree in Ethnochoreography (dance anthropology) from Munster Technological University, Ireland, and a Diploma in Traditional Irish Music from University College Cork, Ireland. She has studied with tradition bearers across genres and cultures including Irish, Métis, French Canadian, Appalachian, American Tap, and Ottawa Valley. Described as "wild, refined, and joyful" by Deirdre Cronin of Irish Music Magazine and “nothing short of spectacular" by legendary Irish musician and academic, Mick Moloney, Danielle brings a unique, inspired, embodied and authentic intersection of traditions and cultures to her work as a performer, researcher, and teacher. Danielle’s recent works include Cumar, a project with master West African drummers and dancers (choreographer and dancer) and The Bad Neighbors Rhythm Project with New York-based master Irish bodhrán player, Anna Colliton, which had its debut at the New York Trad Festival in 2022.

Ian Clark - Guitar

Originally from Stranraer Scotland, Ian now lives in Ottawa gracing Canadian audiences with his sophisticated command of traditional styles. One group that Ian plays with, Traditional Fare, interestingly includes Pierre’s brother Dan (also a fiddler). Ian also currently plays with folk group JIIG, swing group Diminished Responsibility Swing Combo, rockabilly group Dimestore Playboys, contra dance band Odds & Sods, and traditional Scottish combo Atlantic Firth! The chemistry between Pierre and Ian on this recording, made live at Rasputin's Folk Café in Ottawa, is unparalleled in its energy and expertise. The sets of tunes have varying degrees of musical arrangements built in, however the structure was kept loose enough to allow Pierre and Ian to improvise and simply see what would happen in the “heat of the moment.”

"Heat of the Moment shows what can happen when two superbly skilled and creative

musicians are let loose on a stage and allowed to feed off each other's playing. The result is a

wonderfully uninhibited, spontaneous and joyful conversation between fiddle and guitar. In an age when so much music is played and recorded to a cold, predictable formula, Pierre and Ian's playing breaks the rules, steams up the kitchen, and stirs the blood. It's a gem of a recording."

Sean-nós singing (/ˈʃænoʊs/ SHAN-ohss, Irish: [ˈʃan̪ˠ n̪ˠoːsˠ]; Irish for "old style") is unaccompanied traditional Irish vocal music usually performed in the Irish language. Sean-nós singing usually involves very long melodic phrases with highly ornamented and melismatic melodic lines, differing greatly from traditional folk singing elsewhere in Ireland, although there is significant regional variation within Ireland. Sean-nós songs cover a range of genres, from love song to lament to lullaby, traditionally with a strong focus on conveying the relevant emotion of the given song. The term sean-nós, which simply means "in the old way", is a vague term that can also refer to various other traditional activities, musical and non-musical.

About Autumn

Autumn Rhodes was raised in a household full of Irish music.  At the age of 12, while living in rural Indiana, she was given a tin whistle for a birthday present and took to it right away. She hasn’t looked back - she started performing professionally the next year and hasn’t stopped since. Throughout the years she’s toured throughout the United States with bands such as Soltré, Míra, The Colleens, Purest Green, Edington, Barton, & Rhodes, The Bardic Apostles, Kennedy’s Kitchen, and The Wrenboys; she has played for various Irish dance groups including Siamsa, Celtic Fire, and Kaleidoscope, and has partnered up with Julie Henigan, Maldon Meehan, Susan Mashiyama, among others.

She now lives in San Francisco where she teaches music and performs with several bands and individual performers.
